Impacts of Chitosan-Sorbic Acid Composite Coating on the Preservation Effects of Xuancheng Jujube Fruits

  • The present study focused on solving the problems including short storage period of mature fresh-eaten jujube fruits and decreased commodity qualities with the extension of storage period, thus the Xuancheng jujube fruits were used as test materials and five chitosan concentrations(0.1%, 0.25%, 0.5%, 1.0%, 1.5%) were employed to prepare compound preservative solutions with 0.1% sorbic acid. Results showed that the chitosan-sorbic acid composite coating treatment could delay the increase of weight loss rates and decay rates of jujube fruits under 4 ℃ storage, and suppress the reduction of firmness and VC contents, thereby inhibiting the mature senescence process of fruits, improving the storage qualities and prolonging the shelf life. Besides, the comprehensive analysis of fruits qualities indices demonstrated that composite coating solution prepared by 0.25%chitosan and 0.1% sorbic acid presented superior preservation effects.
