Sterilization Efficacy and Quality Influence of Dimethyl Dicarbonate on Passion Fruit Juice

Abstract
Sterilization efficacy and quality influence of dimethyl dicarbonate(DMDC) on passion fruit juice, as well as quality change laws of the sterilized passion fruit juice during 28 days of storage at 4 ℃ were investigated. Results showed that DMDC treatment showed a significant germicidal effect on passion juice, could inhibit the growth of bacteria, mold, and yeast in the passion fruit juice during storage. Compared with thermal sterilization, DMDC treatment could better reduce the loss of bioactive components including phenols and vitamin C in passion fruit juice and the decrease of antioxidant activity. DMDC treatment had no significant influence on the titratable acids and total soluble solid contents of passion fruit juice, the titratable acids and soluble solids contents in DMDC treatment groups remained relatively stable during storage, while the sucrose content declined slightly. Moreover, the change in color of passion fruit juice was little after DMDC sterilization. In summary, DMDC treatment was effective in extending the refrigerated shelf-life of passion fruit juice and better maintaining the quality of passion fruit juice.
